Guillaume Chabry, a pastry chef and confectioner by training, has always sought to rediscover original flavors and quality in food. He does this by eliminating semi-prepared products, ingredients from the food industry, as well as flavor enhancers and colorings. All of this is achieved by working directly with producers to improve their working conditions and the traceability of their products.
In the center of the shop, at our Giesen roaster, our two master roasters carefully and expertly roast small batches each week, extracting all the aromas through a slow roasting process that guarantees the freshness of our coffees.
Each coffee has its own roasting profile, the one that best suits it and allows it to fully express itself in the cup. Our coffee is premium, specialty, fair trade Arabica, and organically produced.
